The shirts are 100% cotton*. The brand is Gildan Activewear Heavy Weight Cotton.

* Some of the extra-small t-shirts are a 50/50 cotton/poly blend.

How would you say the sizing compares to the summit shirts (nike)?

Oh gosh I hate Nike t-shirts.

In size small, it seems like the Nike T-Shirts are wider and shorter. These are Gildan t-shirts (a very common brand). They have a bit narrower and longer fit (at least in size small).

A small fits me without being terribly tight, and I am 5'6" 130.
